Jean-Pierre Brault is a lover of fine produce, which he likes to serve au naturel. Produce is associated to bring out and maintain its finest natural flavours.

The chef and his team of four have worked with some of the great names of cuisine and offer creative, seasonal fare.

To achieve this, the chef uses only rigorously selected fresh produce, like Aubrac beef, Lozère lamb, Basque ham, and Brittany fish.

Even the bread flour has been carefully selected from a specialist artisan miller in Dijon.
